Our Story
Fitness and nutrition has always been a big part of both of our lives. With five young kids between us, figuring out easy ways to nourish not only ourselves but them is so important to us. We recently stumbled upon a podcast talking about the importance of milling your own flour, and we were all in.
Up until about 100 years ago, when people wanted flour for baking, they would bring their whole wheat berries to the local mill, grind them, & take them home to bake their bread for the week. Once industrial milling came on the scene, that all changed. Flour could now be mass produced. In an effort to make it shelf stable, the bran and germ (the parts of the wheat that contain all of the nutrients & fiber) were removed. This caused a rise in several diseases that stemmed from a deficiency in these nutrients. The government ordered that the milling industry start using the whole grain again. They refused, citing they could make more money by separating out the most nutritious parts & selling them to farmers to feed their livestock. As a compromise, they added back synthetic forms of the nutrients. The problem? They only added back 4 of the 40 that they removed. bread baked with fresh milled whole wheat berries is one of God’s most nutrient dense foods, containing 40 of the 44 essential nutrients for sustaining life. Store bought bread (even “whole grain bread”) has a fraction of that, because in the end it still needs to be shelf stable. Eating bread made with freshly milled whole grains will nourish you, fill you & sustain you. Grain, in its purest form, is an essential building block for life. Which is why we’re so passionate about what we do here at Milled.
